Grower’s Series Skin Fermented Pinot Gris 2015

A savoury wine, light copper to strawberry red in colour with abundant aromas of hazelnut husk, forest floor, light red berry and spice. A full and rich palate of chalky tannins and a very long backbone of acidity support a core of pastry, preserved stone fruits and Indian spice.

Viticulturist's Notes

This 2/15 Pinot Gris grows on calcareous clay soils and is entirely hand managed. Cane pruned and heavily crop thinned with considerable leaf removal to ensure natural airflow and freedom from Botrytis. Rows are inter-planted with Phacelia and buckwheat attracting beneficial insects. A cool spring quickly gave way to a warm period over flowering and a beautiful long hot summer, producing numerous small bunches with very ripe seeds, thick skins and outstanding fruit quality, which was hand-picked for delivery to the winery.

Winemaker's Notes

100% destemmed into two open top fermenters and naturally fermented without yeast additions. One lot fermented amongst the vines where the grapes had grown and both stayed on skins for five weeks. Hand plunged daily for extraction of flavour and tannin from the skins, then very slowly pressed into clay amphora and seasoned French oak barriques. Full malolactic fermentation occurred over nine months of aging before bottling without additions, filtration or stabilisation. Harmless sediment will settle at the base of the bottle over time.

Sugar Daddy Dessert Riesling 2008

A spring frost in October gave us some concerns but a warm summer gave a good fruit set. Autumn rains meant there was significant botrytis in our Riesling, which dried up and turned noble, providing bunches with exquisite flavour and complexity.

Seductive perfume of quince, apricot and honey aromas with a mineral edge. Intense palate with amazing fatness, richness and length with a super acidity balance always important in sweet wines.

Sugar Daddy Dessert Riesling 2013

This dessert Riesling is full and exotic on the nose, with plenty of guava, pineapple and mango. A beautiful honey-like texture upfront gives way to a long and luscious palate, knitted together by stunning fruit laced acidity.

Drinking well now, but will reward those who have the will power to cellar for up to twelve years.

The 2013 vintage was characterized by its perfection. Hot summer days, followed by a long and mild Autumn. These conditions gave us the opportunity to produce the first late harvest Riesling since 2008. A section of Riesling was left to hang in the vineyard through most of Autumn, during this time the grapes shriveled, concentrating both flavours and sugar. The small crop load was harvested by hand, allowing only the best bunches to be delivered to the winery. Organically farmed we use no systemic fungicides, insecticides, nor herbicides.

2013 provided small amounts of beautiful noble botrytis from Muddy Water vineyard. We hand-picked over two days before foot crushing and skin soaking for 48hours. We pressed very gently and settled the juice cold for two days before transferring to a small tank for fermentation. We allowed fermentation to go through naturally without the use of commercial yeast. Fermentation stopped by itself at 235g/L residual sugar.

Dry Riesling 2010

The nose shows spice and stonefruit. A very mineral wine with “hot stones in the rain” displaying from the nose as well. The palate has hints of lemon zest, honey, white pepper and spices. A well balanced wine, showing a lot of complexity.

Fitzgerald Chardonnay 2008

Beyond the pure, fruity, nutty and spicy bouquet, this wine has a round creamy and crisp texture. This Chardonnay delivers great balance and authority with floral and fruity aromas of pear, apple and citrus with a hint of buttery toast. Sensuous wine that coats the mouth with a long and dry finish.
