Perfumed with plums, cherries, chocolaty, peppery spices and hints of sage. A smooth mellow wine with lovely supple tannins with the classic black pepper finish. Ready to drink now and very easy to like. Serving Suggestion The peppery scents pair well with rosemary-crusted lamb or tenderloin of venison with Mediterraneen spicy jus. Also perfect bleu d’Auvergne (French cows bleu cheese). Current vintage: 2008
Harvest
Hand harvested 2 lots on April 27th and May 2nd 2008. Selected fruit only. Destemmed using gravity into small open top fermenters.

Cellar & Bottling:
Pre fermentation cold soak for 5 days. Fermentation started after about 7 days. Total time on skins 24 days. Pressed, and settled for 3 days before racking to barrels. Full malolactic in barrel. Aged in barrel for 21 months before racking, blending and bottling without filtration. Bottled on March 9, 2010 .

The Wine
Syrah, along with Pinotage, is being retained after its success in our trial block. Although the quantities have been tiny, we are excited by what this variety has shown in the last six seasons. We have top grafted our Bordeaux reds to Syrah to increase our production, if only a little. At present we believe Muddy Water is the southern-most Syrah producer in the world! To ensure quality and uniformity this wine is a single blend bottled under screw cap. This wine will benefit from decanting half an hour before drinking.
