Luscious golden straw in colour this Waipara Sauvignon Blanc hints at guava, feijoa and pineapple on the nose. Strong succulent peach and rock melon intertwine with a creamy mid palate from barrel fermentation. Sensuous yet mineral texture throughout the palate gives way to a long and refreshing finish. A striking full bodied sytle of Sauvignon Blanc Serving Suggestions Will pair well with asparagus and hollandaise sauce, or fresh goats cheese, white poultry or grilled fish.
Harvest Grapes were harvested from three Waipara Valley vineyards with varying soil types, including two on "Glsnevin gravels" and one on clay dominat soils. 2011 was a year highlighted by naturally low crop levels in Sauvignon Blanc. Vine density on all three vineyards is 2500/hectare.

Wine Fruit was gently pressed and 1/3 of the fruit was settled in tank, 1/3 was transferred into old French oak barrels, the remaining third was inoculated with a neutral yeast strain. All three portions had extended time on yeast lees for development of texture. the aim of the differing techniques was to provide a wine with complexity and depth - only achievable when the grapes are fully ripe and in great condition. Growers’ Series: With the 2008 vintage we introduced a new series of wines. Muddy Water Growers Series will be used for grapes not grown on our estate vineyards which are currently undergoing transition to organic certification. To ensure quality and uniformity this wine is a single lot sealed with a screw cap. Do not expect or accept any bottle variation. We regard bottle variation as an unacceptable “thing of the past”.
