The bouquet is intriguing and distinctive, combining complex florals and fruity ripe plum and cherry flavours with a delicate hints of musk and spices. The mouth is complex, elegant and spicy. A hearthy touch does enrich the identity of this single block. Tannins are present and elegant but should polish up with time in the cellar. The fruity and mineral notes that add depth and distinction. Serving Suggestions Fig stuffed Pigeon or seared scallops carpacio with black truffle will harmonize the delicacy and texture of the Pinot Noir. Current vintage: 2009
Harvest Two lots, hand harvested on April 1st and 2nd 2008. Selected fruit only. Destemmed into small open top fermenters.

Cellar & Bottling Pre fermentation cold soak for five to six days. Native fermentation started after five days. Manual cap management. Total time on skins 28 to 30 days. Pressed, racked to barrels, 30% new french oak. Full malolactic in barrel. Barrel aged for 15 months before racking, settling and bottling without any filtration. Bottled on August 17th, 2010

The wine This is the fourth single vineyard Hare’s Breath Pinot Noir from Muddy Water and they just keep getting better! The wine is already starting to show the concentration and complexity that we believe will be the hallmark of this vineyard. The vineyard is on limestone based slopes at the back of our property. Planted in 2001 and 2002 the row and vine spacing has been reduced giving us 5000 vines per hectare. There are a range of different clones fermented together. We rarely move our wine and when possible movements are by gravity or pressure to reduce the effect of pumping. This wine will benefit from decanting about half an hour before serving. To ensure quality and uniformity this wine is a single batch bottled under a screw cap closure. We regard bottle and batch variation as unacceptable “things of the past”. Organic – Since 2007 Muddy Water’s estate vineyards have been farmed organically – we will achieve full organic certification in 2010
