Beyond the pure, fruity, nutty and spicy bouquet. This wine has a round creamy and crisp texture. This Chardonnay delivers great balance and authority with floral and fruity aromas of pear, apple and citrus with a hint of buttery toast. Sensuous wine that coats the mouth with a long and dry finish. Serving Suggestion Delicious served with slow roasted pork and sticky apple sauce or New Zealand salmon fillet baked with fresh tomato coulis, potato and snow peas. The succulent roasted salmon fillet melts in your mouth and combines beautifully with the texture of our Chardonnay. Current vintage: 2009
Harvest
Hand harvested between March 27th and April 5th 2009. Selected fruit only. Hand sorted and whole cluster pressed.
Our aim is to produce a subtle, complex, Chardonnay that reflects our vineyard. by working with the canopies and keeping the crop level low we are producing balanced fruit, which does not require fining or other maniputlation. Our site gives us intense minerally fruit characters and out low tech traditional handling give the wine complexity which we enhance with the judicious use of new oak barrels.
The 2008-2009 growing season was very good for grapes in Waipara, a cool spring followed by a very warm dry period through November, December and January. While there was some rain in February and March it was not enough to create problems.
Racked to barrels immediately after pressing. 100% barrel fermented in 228L barriques and 500L puncheions (~15% new) with native yeasts followed by a full malolactivc fermentation. All lots were held on fermentation lees for eleven months before racking and blending. the was kept on light lees in tank for a further 4 months before filtering and bottling.
